  • 3 cups cooked, shredded boneless skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 8 flour or corn tortillas (6-inch)
  • 2 cups shredded Monterey Jack cheese
  • 2 cups enchilada sauce (homemade or store-bought)
  • 1 cup high-quality canned tomato sauce
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, heat olive oil and sauté onions until translucent. Add garlic and cook until golden.
  3. Add shredded chicken to the skillet; season with salt, pepper, cumin, and chili powder. Cook for about 7-10 minutes until heated through.
  4. To make the sauce, stir in tomato sauce with more chili powder and cumin; simmer for about 5 minutes.
  5. Pour some sauce into a baking dish. Fill each tortilla with chicken mixture and cheese, roll tightly, and place seam-side down in the dish.
  6. Spoon remaining sauce over rolled tortillas and sprinkle with remaining cheese. Cover with foil and bake for 20 minutes; remove foil and bake for another 10-15 minutes until bubbly.
