  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 8 oz ramen noodles (fresh or dried)
  • ¼ cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 2 green onions, sliced (for garnish)
  • 1 tbsp sesame seeds (optional)

Instructions

  1. Slice the chicken into bite-sized pieces and chop the vegetables.
  2. Heat sesame oil in a large skillet over medium-high heat. Cook the chicken until golden brown (6-8 minutes) and set aside.
  3. In the same skillet, add minced garlic and chopped vegetables. Sauté for about 3-4 minutes until softened.
  4. Prepare ramen noodles according to package instructions; drain and reserve some cooking water.
  5. Add soy sauce and ramen noodles to the skillet. Mix well, adding reserved water if needed for moisture.
  6. Toss everything together for another minute to combine flavors. Garnish with green onions and sesame seeds before serving.
