  • 1 cup all-purpose flour
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp capers
  • 4 tbsp butter
  • 2 tbsp olive oil

Instructions

  1. Place chicken breasts between plastic wrap and pound to about 1/2 inch thick. Season with salt and pepper.
  2. Dredge each piece in flour, shaking off excess.
  3. Heat olive oil and butter in a skillet over medium-high heat. Cook chicken for about 3 minutes per side until golden brown.
  4. Reduce heat and add minced garlic; sauté until fragrant. Pour in chicken broth and lemon juice; simmer for about 5 minutes.
  5. Stir in capers, then return the chicken to the skillet to coat in the sauce.
