  • 1 lb ground turkey
  • 1 medium onion, chopped (about 1 cup)
  • 3 cloves garlic, minced
  • 2 tbsp fresh cilantro, finely chopped
  • 23 chipotle peppers in adobo sauce, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp cumin powder
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. In a large bowl, mix ground turkey with chopped onion, minced garlic, cilantro, and chipotle peppers until well combined.
  2. Shape the mixture into golf ball-sized meatballs using wet hands.
  3. Heat olive oil in a skillet over medium heat; add meatballs and cook until browned on all sides (8-10 minutes). Remove and set aside.
  4. In the same skillet, sauté remaining onions until translucent (about 3-4 minutes).
  5. Add canned tomatoes and cumin powder; stir to combine and simmer for 5 minutes.
  6. Return meatballs to the skillet; simmer in the sauce for an additional 10 minutes.
  7. Garnish with fresh cilantro before serving hot over your choice of accompaniments.
