- 2 tbsp fresh orange juice
- 1 tsp Dijon mustard

Instructions
- Cook the penne pasta in salted boiling water until al dente (8-10 minutes). Drain and rinse with cold water.
- In a small bowl, whisk together olive oil, orange juice, Dijon mustard, salt, and pepper for the vinaigrette.
- In a large bowl, combine cooked pasta, feta cheese, cranberries, spinach, cherry tomatoes, and red onion.
- Pour the vinaigrette over the salad and toss until well combined.
