  • 8 oz penne pasta
  • 1 cup crumbled feta cheese
  • 1/2 cup dried cranberries (unsweetened)
  • 2 cups packed fresh spinach
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup thinly sliced red onion
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh orange juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta in salted boiling water until al dente (8-10 minutes). Drain and rinse with cold water.
  2. In a small bowl, whisk together olive oil, orange juice, Dijon mustard, salt, and pepper for the vinaigrette.
  3. In a large bowl, combine cooked pasta, feta cheese, cranberries, spinach, cherry tomatoes, and red onion.
  4. Pour the vinaigrette over the salad and toss until well combined.
  5. Chill in the refrigerator for at least 30 minutes before serving.
