  • 2 medium sweet potatoes, diced (about 2 cups)
  • 1 large onion, chopped
  • 1 bell pepper, chopped (any color)
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onions and bell peppers, cooking until soft.
  2. Increase heat slightly and add ground beef. Cook until browned and crumbled, about 5-7 minutes.
  3. Stir in diced sweet potatoes, garlic, cumin, and paprika. Mix well and add a splash of water.
  4. Cover skillet and reduce heat to low. Cook for 15-20 minutes until sweet potatoes are tender.
