  • 8 ounces whole wheat pasta
  • 1 medium zucchini, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons Italian seasoning
  • ¼ cup grated Parmesan cheese

Instructions

  1. Cook the pasta according to package instructions in boiling salted water until al dente. Drain and set aside.
  2. In a large skillet over medium heat, warm the olive oil. Sauté onions and garlic until fragrant (about 2-3 minutes).
  3. Increase heat to medium-high and add ground turkey. Cook until browned, breaking it apart with a spatula (approximately 5-7 minutes).
  4. Add zucchini and red bell pepper to the skillet, stirring continuously until softened but still crunchy (around 4-5 minutes).
  5. Sprinkle Italian seasoning over the mixture and stir well for another minute.
  6. Combine the cooked pasta with the turkey and veggie mixture; toss gently to combine. If desired, add a splash of reserved pasta water for creaminess.
  7. Serve hot topped with grated Parmesan cheese.
