- 3–4 boneless, skinless chicken breasts
- ¼ cup extra virgin olive oil
- 4 garlic cloves, minced
- Juice of 1 lemon
- 2 teaspoons dried oregano
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- ½ cup crumbled feta cheese
Instructions
- In a large bowl, mix olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
- Preheat your grill to medium-high heat (375°F) or oven to 400°F. Line a baking sheet with parchment paper if using the oven.
- Grill or bake chicken for 6-8 minutes per side until cooked through (internal temperature should reach 165°F).
- In the last few minutes of cooking, add halved cherry tomatoes on top of the chicken to roast.
- During the final minute of cooking, sprinkle crumbled feta cheese over the chicken until slightly melted.
