- 8 oz spaghetti or penne
- 2 cups cherry tomatoes
- 6 garlic cloves
- 3 tbsp extra virgin olive oil
- 1/4 cup fresh basil leaves
- 1/2 cup grated Parmesan cheese
- Salt & pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- On a baking sheet, toss cherry tomatoes and whole garlic cloves with olive oil, salt, and pepper. Roast for about 20 minutes until caramelized.
- Meanwhile, bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente.
- Combine roasted tomatoes and garlic with the drained pasta in a large pot. Toss gently.
