  • 6 large eggs
  • 2 cups fresh spinach, chopped
  • 1 cup button mushrooms, sliced
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 1/2 cup whole milk
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté diced onions until translucent. Add sliced mushrooms and cook until golden brown.
  3. Stir in chopped spinach and cook until wilted, about 2 minutes.
  4. In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
  5. Spread the sautéed vegetable mixture evenly in a greased pie dish. Pour the egg mixture over the top.
  6. Bake for 30-35 minutes or until set and lightly golden on top. Allow to cool slightly before slicing.
