- Juice of 1 lemon
- 2 tbsp extra virgin olive oil
- 4 tbsp sour cream or Greek yogurt (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss diced sweet potatoes with olive oil, cumin, paprika, salt, and pepper until evenly coated.
- Spread the sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes until tender and caramelized.
