  • 4 cups vegetable broth
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp mirin

  • 2 sliced green onions (for garnish)
  • 150g protein of choice (tofu, chicken, or shrimp)
  • 100g assorted vegetables (spinach, bok choy, or cabbage)

Instructions

  1. Heat vegetable broth in a large pot over medium heat. Add grated ginger and minced garlic; stir until fragrant.
  2. Stir in soy sauce and mirin, adjusting flavor to taste.
  3. Add udon noodles and cook according to package instructions until tender yet slightly firm.
  4. Toss in your vegetables during the last few minutes of cooking until just wilted.
  5. If using tofu or shrimp, add at this stage to warm through.
