  • 1 cup whole milk ricotta cheese, drained well
  • 1/2 cup (1 stick) unsalted butter, softened at room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1 tsp fresh orange zest, finely grated
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp fine sea salt
  • 3/4 cup mini semi-sweet chocolate chips
  • 1/3 cup powdered confectioners sugar (for dusting)
  • 1/4 cup shelled pistachios, finely chopped (for garnish)

Instructions

  1. Prep & Drain: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Drain ricotta in a fine sieve lined with paper towels for 10 minutes.
  2. Cream Wet Ingredients: In a large bowl, beat softened butter and granulated sugar for 2-3 minutes until fluffy. Add eggs one at a time, then beat in vanilla extract, orange zest, and drained ricotta cheese.
  3. Mix Dry Ingredients: In another bowl, whisk flour, baking powder, cinnamon, and salt. Gradually add to wet ingredients on low speed until combined. Fold in mini chocolate chips.
  4. Scoop & Chill: Drop 1.5-tablespoon scoops of dough onto prepared sheets, 2 inches apart. Chill for 15 minutes for maximum puffiness.
  5. Bake & Garnish: Bake at 350°F for 12-14 minutes until bottoms are golden and tops are set. Cool for 5 minutes, then dust with powdered sugar and chopped pistachios.
