- 4 medium sweet potatoes
- 1 cup fresh cranberries, chopped
- 1 large Fuji or Honeycrisp apple, diced
- 1/4 cup brown sugar
- 2 tbsp butter
- 1 tsp ground cinnamon
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Bake whole sweet potatoes on a lined baking sheet for 45-60 minutes until tender.
- While cooling, mix chopped cranberries, apple, brown sugar, and cinnamon in a bowl.
- Cut baked sweet potatoes in half lengthwise and scoop out the flesh into a mixing bowl.
- Combine the sweet potato flesh with butter and the cranberry-apple mixture until smooth yet slightly chunky.
- Refill sweet potato skins with the mixture and top with nuts if desired.
- Bake again for 20-25 minutes until heated through and golden on top.
