- 2 fresh salmon fillets (6 oz each)
- 1 cup quinoa (or brown rice)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 ripe avocado, diced
- ½ cup fresh basil, packed
- ½ cup fresh parsley, packed
- Juice of 1 lemon
- 2 tbsp olive oil
- 1 garlic clove
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse quinoa under cold water; combine with 2 cups water in a pot and bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until fluffy.
- Brush salmon fillets with olive oil, season with salt and pepper, and place on a lined baking sheet.
- Bake salmon for 12-15 minutes until cooked through.
- In a blender, combine basil, parsley, garlic, lemon juice, olive oil, salt, and pepper; blend until smooth.
- Assemble bowls starting with quinoa or rice; top with salmon, cucumber, tomatoes, avocado, and drizzle with dressing.
