- 2 large eggs, at room temperature
- 1/2 cup fresh lemon juice (about 2 lemons)
- Zest of 1 lemon
- 1 cup fresh raspberries
- 1 tsp baking powder
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a bowl, combine flour, granulated sugar, and cold butter. Mix until it resembles coarse crumbs. Press into the bottom of the prepared pan.
- Bake the crust for about 15 minutes until golden.
- In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, baking powder, and raspberries until combined.
- Pour the filling over the baked crust and spread evenly.
- Bake for an additional 25-30 minutes until set with a slight jiggle in the center.
- Cool completely before slicing into squares; dust with powdered sugar before serving.
