Description

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, cold and cubed
  • 2 large eggs, at room temperature
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 1 cup fresh raspberries
  • 1 tsp baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a bowl, combine flour, granulated sugar, and cold butter. Mix until it resembles coarse crumbs. Press into the bottom of the prepared pan.
  3. Bake the crust for about 15 minutes until golden.
  4. In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, baking powder, and raspberries until combined.
  5. Pour the filling over the baked crust and spread evenly.
  6. Bake for an additional 25-30 minutes until set with a slight jiggle in the center.
  7. Cool completely before slicing into squares; dust with powdered sugar before serving.
