  • 4 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • 1 tbsp freshly squeezed lemon juice
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup toasted pine nuts (optional)

Instructions

  1. Rinse the brown rice under cold water until it runs clear.
  2. In a medium saucepan over medium heat, warm olive oil. Sauté minced garlic until golden brown (about 1–2 minutes).
  3. Add rinsed brown rice and cook for another minute until fragrant.
  4. Pour in vegetable broth, salt, and pepper; bring to a boil. Then lower the heat to simmer, cover, and cook for 30–35 minutes until rice is tender.
  5. Fold in fresh spinach until wilted (about 2–3 minutes).
  6. Finish with lemon juice, tossing gently before serving.
