  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter (chilled, cubed)
  • 1/4 cup granulated sugar
  • 1/4 cup fresh strawberries (chopped)
  • 1/4 cup fresh blueberries
  • 1/4 cup fresh raspberries
  • 1 tsp vanilla extract
  • 1 egg yolk
  • Zest of 1 lemon
  • Pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix flour and sugar, then cut in chilled butter until crumbly.
  3. Stir in egg yolk and cold water until dough forms; wrap and chill for 30 minutes.
  4. Roll out the dough to 1/8 inch thick; cut circles for tart pans and prick bottoms with a fork.
  5. In another bowl, combine berries, sugar, vanilla, and lemon zest gently.
  6. Spoon berry mixture into tart shells and bake for 20-25 minutes until golden brown.
  7. Let cool slightly before serving.
