  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 2 medium yellow onions, chopped
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 cups dry red wine (like Burgundy)
  • 2 cups beef broth
  • 1 bouquet garni (thyme, bay leaf, parsley)
  • 4 oz bacon lardons
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping vegetables and cutting the beef into uniform cubes.
  2. Heat olive oil in a large pot over medium-high heat and sear the beef cubes until browned.
  3. Add bacon lardons to the pot and cook until crispy; then remove the bacon but keep the drippings.
  4. Sauté onions and carrots in the drippings until softened (about 5 minutes).
  5. Stir in minced garlic and mushrooms; cook until mushrooms are golden (around 4-5 minutes).
  6. Pour in red wine to deglaze the pot, simmering for about 10 minutes.
  7. Add beef broth and bouquet garni; bring to a gentle boil before reducing heat to simmer for at least 1.5 hours.
