Ingredients

1 tbsp olive oil or butter

1 medium yellow onion, diced

2 cloves garlic, minced

2 cups cooked chicken, shredded

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes (with juices) (ADDED)

1 can (4 oz) diced green chilies (ADDED)

1 can (10 oz) red enchilada sauce

4 cups chicken broth

1 tsp ground cumin

1 tsp chili powder

4 oz cream cheese, softened (optional, for creaminess) (ADDED)

Salt and black pepper to taste

Toppings (as seen in photo):

Fresh cilantro, chopped

Fresh avocado, diced or sliced

Lime wedges

Shredded Cheddar / Monterey Jack cheese


Instructions

  • Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Add minced garlic and cook for 1 minute until fragrant.

  • Combine Ingredients: Add shredded chicken, black beans, corn, diced tomatoes, diced green chilies, enchilada sauce, chicken broth, cumin, chili powder, salt, and pepper.

  • Simmer: Bring to a boil, then reduce heat to low and simmer uncovered for 20 minutes to allow the flavors to meld.

  • Creamy Finish (Optional): Stir in softened cream cheese until fully melted and smooth.

  • Garnish & Serve: Ladle into bowls and top with fresh cilantro, avocado slices, a squeeze of lime juice, and shredded cheese!

Notes

For added convenience, use rotisserie chicken. Customize toppings with sour cream, cheese, or fresh cilantro. Store leftovers in an airtight container.
