- 15 oz can kidney beans, drained and rinsed
- 1 medium zucchini, chopped
- 1 cup small pasta (optional)
- 1–2 tsp Italian seasoning
- 2 cups fresh spinach or kale
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for about 5 minutes until softened.
- Stir in garlic and Italian seasoning; cook for an additional minute until fragrant.
- Pour in vegetable broth and add canned tomatoes. Bring to a gentle boil while stirring.
