  • 4 boneless, skinless chicken breasts (about 600g)
  • 1 cup plain full-fat yogurt
  • 2 tablespoons chicken tikka masala spice mix
  • 2 cups crispy rice cereal
  • 1 cup diced bell peppers (any color)
  • 1 cup diced cucumbers
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil

Instructions

  1. Marinate chicken in yogurt and tikka spice mix for at least 30 minutes or overnight.
  2. Preheat grill or skillet over medium-high heat. Cook marinated chicken for 6-7 minutes per side until golden brown.
  3. While chicken cooks, chop bell peppers, cucumbers, and cilantro. Combine in a large bowl.
  4. In another bowl, mix crispy rice cereal with olive oil and lemon juice.
  5. Once cooked, let the chicken rest before chopping into bite-sized pieces. Add to the vegetable mixture along with the crispy rice. Toss gently to combine.
  6. Serve immediately on a platter or in bowls, garnished with extra cilantro.
