  • 1 lb boneless chicken thighs
  • 1/3 cup pure honey
  • 2 tbsp chipotle peppers in adobo sauce (minced)
  • 3 garlic cloves (minced)
  • 2 tbsp lime juice (freshly squeezed)
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • Optional toppings: diced avocado, chopped cilantro

Instructions

  1. In a bowl, mix honey, minced chipotle peppers, garlic, lime juice, salt, and pepper.
  2. Place chicken thighs in a zip-lock bag and pour the marinade over them. Seal and refrigerate for at least 30 minutes.
