  • 1/4 cup fresh dill, chopped
  • 3 garlic cloves, minced
  • 3 tbsp extra virgin olive oil
  • 1 cup rice or quinoa (dry)
  • 2 cups water (for cooking rice/quinoa)
  • Your choice of seasonal vegetables (e.g., bell peppers, zucchini)

Instructions

  1. In a mixing bowl, whisk together lemon juice, minced garlic, olive oil, and chopped dill.
  2. Place chicken breasts in a resealable bag or shallow dish; pour marinade over them and refrigerate for at least 30 minutes.
  3. Rinse rice under cold water; combine with water in a saucepan over medium heat. Bring to a boil, reduce heat to low, cover, and simmer for 15-20 minutes until fluffy.
  4. Heat a skillet over medium-high heat with olive oil. Add marinated chicken and cook for about 6-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
