- 1 cup bell peppers, chopped (mixed colors)
- 1 cup sweet corn (fresh or frozen)
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 cups vegetable broth
- Juice of 2 limes
- ¼ cup fresh cilantro, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- Salt to taste
Instructions
- Rinse quinoa under cold water until clear. Heat olive oil in a large skillet over medium heat.
- Sauté onion and garlic until translucent (3-4 minutes).
- Add spices and quinoa; toast for about 1 minute.
- Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes.
- Stir in black beans, corn, and bell peppers. Cook uncovered for another 5 minutes.
- Remove from heat and mix in lime juice and cilantro before serving.
