  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. Slice chicken breasts into strips and chop the bell peppers and onion.

  5. Bake for 20-25 minutes until the chicken is cooked through and veggies are tender.
