Instructions
- Prep ingredients: Wash and halve the potatoes.
- Season steak: Generously season ribeye with salt and pepper; let sit for 30 minutes at room temperature.
- Cook potatoes: Preheat oven to 425°F (220°C). Toss potatoes with olive oil, salt, pepper, and herbs, then roast for 25-30 minutes until golden brown.
- Sear steak: Heat a large skillet over medium-high heat. Add butter and olive oil. Sear the ribeye for 4-5 minutes on each side until browned.
- Add garlic butter: Stir in minced garlic and additional butter when the steak is nearly done; spoon over the steak for 1-2 minutes.
