Ingredients

  • Ribeye Steak
  • Baby Yukon Gold Potatoes
  • Fresh Garlic
  • Unsalted Butter
  • Olive Oil
  • Fresh Rosemary or Thyme
  • Salt & Pepper

Instructions

  1. Prep ingredients: Wash and halve the potatoes.
  2. Season steak: Generously season ribeye with salt and pepper; let sit for 30 minutes at room temperature.
  3. Cook potatoes: Preheat oven to 425°F (220°C). Toss potatoes with olive oil, salt, pepper, and herbs, then roast for 25-30 minutes until golden brown.
  4. Sear steak: Heat a large skillet over medium-high heat. Add butter and olive oil. Sear the ribeye for 4-5 minutes on each side until browned.
  5. Add garlic butter: Stir in minced garlic and additional butter when the steak is nearly done; spoon over the steak for 1-2 minutes.
  6. Rest and serve: Let the steak rest for 5 minutes before slicing. Serve with roasted potatoes drizzled with garlic butter.
