  • 1 lb baby potatoes (waxy variety)
  • 3 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ cup crispy bacon bits (optional)

Instructions

  1. Wash the baby potatoes thoroughly and cut them in half.
  2. Preheat your grill to medium-high heat (about 400°F or 200°C).
  3. In a mixing bowl, toss the halved potatoes with olive oil, salt, pepper, and garlic powder until well coated.
  4. Place the seasoned potatoes cut-side down on the grill and cook for 15-20 minutes until fork-tender and charred.
  5. Remove from the grill and while still warm, toss with fresh herbs, lemon juice, and additional olive oil if desired.
  6. Serve warm or let cool in the fridge for about 30 minutes before serving.
