  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 can (14.5 oz) diced tomatoes with herbs
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups low-sodium beef broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot over medium heat, add oil and sauté the chopped onions and minced garlic until translucent.
  2. Increase heat slightly; add ground beef and cook until browned.
  3. Stir in chopped bell peppers along with chili powder, cumin, and smoked paprika; cook until peppers soften.
  4. Add diced tomatoes with juices and rinsed beans; mix well.
  5. Pour in beef broth to cover all ingredients. Bring to a boil, then reduce heat to simmer for about 30 minutes.
  6. Adjust seasoning as needed before serving; garnish with fresh cilantro if desired.
