- 1 lb ground turkey
- 1 cup quinoa, rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 2 bell peppers, diced
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 tsp chili powder
- 1 tsp cumin
- 4 cups low-sodium chicken broth
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté the onion and bell peppers for about 5 minutes until soft.
- Add ground turkey and garlic; cook until the turkey is browned and no longer pink (7 to 10 minutes).
- Stir in chili powder, cumin, and diced tomatoes with juices; mix well.
- Pour in chicken broth and add rinsed quinoa. Bring to a boil, then reduce heat to simmer for about 15 minutes until quinoa is fluffy.
- Fold in black beans during the last few minutes of cooking. Squeeze fresh lime juice just before serving.
