  • 1 lb ground turkey
  • 1 cup quinoa, rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 bell peppers, diced
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 4 cups low-sodium chicken broth
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the onion and bell peppers for about 5 minutes until soft.
  2. Add ground turkey and garlic; cook until the turkey is browned and no longer pink (7 to 10 minutes).
  3. Stir in chili powder, cumin, and diced tomatoes with juices; mix well.
  4. Pour in chicken broth and add rinsed quinoa. Bring to a boil, then reduce heat to simmer for about 15 minutes until quinoa is fluffy.
  5. Fold in black beans during the last few minutes of cooking. Squeeze fresh lime juice just before serving.
