  • 2 medium Granny Smith apples, diced
  • 2 (14.5 oz) cans diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped (any color)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep all ingredients: chop onions, bell peppers, and apples.
  2. In a large pot over medium heat, heat olive oil. Add onions and bell peppers; sauté until soft (about 5 minutes).
  3. Stir in minced garlic, chili powder, and cumin; cook for another minute until aromatic.
  4. Push veggies aside and add ground turkey; brown for 6-8 minutes.
  5. Mix in diced apples and canned tomatoes; simmer together.
  6. Pour in vegetable broth; season with salt and pepper. Bring to boil then reduce heat to simmer uncovered for 30 minutes.
