  • 2 ripe bananas, mashed
  • 16 oz (450g) full-fat cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 tsp pure vanilla extract
  • 3 large eggs

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter until crumbly.
  2. Press the mixture into the bottom of a springform pan and bake for 10 minutes until golden.
  3. In another bowl, beat cream cheese until smooth. Add sugar and blend well before mixing in mashed bananas and vanilla.
  4. Gradually add eggs one at a time, mixing gently until just combined.
  5. Pour filling over the crust and gently shake for an even surface.
  6. Bake for 50-60 minutes until edges are set but center has a slight jiggle. Cool and refrigerate for at least four hours or overnight.
