  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil

Instructions

  1. Cook jasmine rice according to package instructions; let cool completely.
  2. In a large skillet, heat vegetable oil over medium heat. Sauté minced garlic until fragrant, about 30 seconds.
  3. Add shrimp and mixed vegetables; cook until shrimp turns pink, about 3-4 minutes.
  4. Push the mixture aside and scramble whisked eggs in the skillet until just set.
  5. Stir in cooled rice, soy sauce, and sesame oil; mix until heated through, about 2-3 minutes.
