  • 34 boneless, skinless chicken breasts (about 600g)
  • 1 cup orzo pasta (200g)
  • 2 cups fresh spinach (60g)
  • 1 cup cherry tomatoes, halved (150g)
  • ½ cup crumbled feta cheese (75g)
  • Juice and zest of 1 lemon
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Chop chicken into bite-sized pieces and mince garlic.
  2. Sauté the Chicken: Heat olive oil in a large skillet over medium heat. Add seasoned chicken pieces and cook until golden brown (6-7 minutes).
  3. Add Garlic & Tomatoes: Stir in minced garlic and halved cherry tomatoes; sauté until tomatoes soften (3-4 minutes).
  4. Cook the Orzo: In a separate pot, cook orzo per package instructions until al dente. Reserve some pasta water; then drain.
  5. Combine Ingredients: Add cooked orzo to the skillet along with fresh spinach; stir until spinach wilts.
  6. Finish with Lemon & Feta: Remove from heat; mix in lemon juice, zest, and crumbled feta. Adjust seasoning as needed.
