Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup pumpkin puree (canned)
- 8 oz cream cheese, softened
- ¾ cup granulated sugar (divided)
- 1 cup heavy whipping cream
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 tsp pure vanilla extract
- ¼ cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes until golden brown. Cool completely.
- In a mixing bowl, blend pumpkin puree, ¼ cup sugar, cinnamon, nutmeg, and vanilla extract until smooth. Gently fold in half of the whipped cream.
- In another bowl, beat softened cream cheese with remaining sugar until creamy. Fold in the rest of the whipped cream until well combined.
- Spread half of the pumpkin mixture over the cooled crust, then add half of the cheesecake mixture on top. Repeat layers until finished.
- Cover with plastic wrap and refrigerate for at least four hours or overnight before serving.
