  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 cups fresh apples, peeled and diced (preferably Granny Smith)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup apple cider
  • 1 tsp ground cinnamon
  • 2 tsp vanilla extract
  • 3 large eggs, at room temperature

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar; mix well. Press into the bottom of a springform pan.
  3. Bake for 10 minutes until golden; let cool.
  4. In another bowl, beat cream cheese until smooth. Gradually add remaining sugar and mix until fluffy.
  5. Mix in sour cream, vanilla extract, cinnamon, and apple cider until combined.
  6. Add eggs one at a time on low speed just until incorporated.
  7. Pour filling over cooled crust and smooth the top.
  8. Bake for 50-60 minutes or until slightly jiggly in the center. Turn off the oven and let it cool inside for an hour before refrigerating for at least four hours.
