  • 2 tbsp unsalted butter
  • 1 cup shallots, chopped (about 2 large shallots)
  • 2 tbsp tomato paste
  • 1 cup dry white wine
  • 4 cups seafood stock
  • 1/4 tsp cayenne pepper
  • 1 cup heavy cream

Instructions

  1. Prepare the Lobster Tails: Boil salted water in a large pot. Cook lobster tails for 8-10 minutes until bright red and opaque. Cool, then chop into bite-sized pieces.
  2. Sauté Aromatics: Melt butter in a large pot over medium heat. Add chopped shallots and cook until translucent (about 5 minutes).
  3. Add Tomato Paste and Wine: Stir in tomato paste, cooking for another minute before adding white wine. Simmer for 3-4 minutes until reduced by half.
  4. Create the Base: Pour in seafood stock and cayenne pepper; simmer gently for 10 minutes.
  5. Add Cream and Lobster Meat: Stir in heavy cream over low heat, then fold in chopped lobster meat.
  6. Blend Smoothly (Optional): For a silky texture, blend with an immersion blender or regular blender until smooth.
