Ingredients

  • 2 medium fresh beets, peeled and cubed
  • 2 medium sweet potatoes, peeled and cubed
  • 4 oz feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp lemon zest
  • ¼ cup fresh parsley or mint, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the beets and sweet potatoes; cut them into bite-sized cubes.
  3. In a large bowl, toss the cubed vegetables with olive oil, salt, and pepper.
  4. Spread the veggies on a parchment-lined baking sheet and roast for 25-30 minutes until tender.
  5. Allow the roasted vegetables to cool slightly before combining them in a large bowl with feta cheese and fresh herbs.
  6. Squeeze lemon juice over the mixture along with lemon zest; toss gently.
