  • 16 oz cream cheese, softened
  • 1 cup granulated sugar (divided)
  • 3 large eggs (room temperature)
  • 1 tsp pure vanilla extract
  • 1 cup sour cream (full-fat)
  • 1/4 cup granulated sugar (for brulee)
  • 1/2 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs and melted butter; press into a greased springform pan.
  3. Bake crust for 10 minutes until golden; cool.
  4. Beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla and sour cream.
  5. Pour filling into cooled crust; tap to remove air bubbles.
  6. Bake for 55-60 minutes until set yet slightly jiggly in the center. Turn off oven and cool inside for an hour.
  7. Chill cheesecake for at least four hours or overnight.
