  • 1 ½ cups crushed chocolate cookies
  • ½ cup unsalted butter, melted
  • 8 oz dark chocolate, melted
  • 8 oz milk chocolate, melted
  • 8 oz white chocolate, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 3 large eggs (room temperature)
  • 2 tsp vanilla extract
  • ¼ cup unsweetened cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C). Combine crushed chocolate cookies and melted butter in a bowl. Press into the bottom of a springform pan and bake for about 10 minutes.
  2. Melt dark, milk, and white chocolates separately using a double boiler or microwave; let cool slightly.
  3. In a mixing bowl, beat softened cream cheese until smooth. Gradually add sugar and mix until fluffy. Incorporate sour cream and vanilla.
  4. Add eggs one at a time on low speed to avoid overmixing. Divide batter into three bowls and fold in each type of melted chocolate separately.
  5. Pour the batters alternately onto the cooled crust for a marbled effect. Bake at 325°F (160°C) for about one hour until slightly jiggly.
  6. Turn off oven and leave cheesecake inside for an additional hour before cooling completely at room temperature. Refrigerate overnight before serving.
