  • 1 ½ cups graham cracker crumbs
  • ⅓ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 3 large eggs (room temperature)
  • 2 tsp ground cinnamon
  • 2 tsp vanilla extract
  • ¼ tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of a springform pan.
  2. In another bowl, beat softened cream cheese with granulated and brown sugars until smooth. Add eggs one at a time, beating well after each addition.
  3. Mix in vanilla extract and ground cinnamon until combined. Pour cheesecake filling over the crust and smooth the top.
  4. Bake for about 50-60 minutes until slightly jiggly in the center. Turn off the oven and cool for an hour with the door slightly open before refrigerating for at least four hours.
