  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ⅓ cup fresh lemon juice
  • Zest of 2 lemons
  • 1 tsp vanilla extract
  • 3 large eggs (room temperature)

Instructions

  1. Preheat the oven to 325°F (160°C) and lightly grease a springform pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until resembling wet sand. Press into the bottom of the pan and bake for 10 minutes until golden.
  3. Beat cream cheese in a large bowl until smooth. Gradually add sugar until fluffy.
  4. Mix in sour cream, lemon juice, lemon zest, and vanilla until combined.
  5. Add eggs one at a time on low speed; avoid overmixing.
  6. Pour filling over the cooled crust. Bake for 50-60 minutes until slightly jiggly in the center.
  7. Turn off the oven and let cheesecake cool inside with the door ajar for an hour before chilling in the fridge for at least four hours.
