  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 1 cup pumpkin puree
  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  2. Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press firmly into the bottom of the dish.
  3. In another bowl, beat softened cream cheese until smooth. Gradually mix in sugar, then add eggs one at a time.
  4. Stir in pumpkin puree, cinnamon, nutmeg, and vanilla until well combined.
  5. Pour half the cheesecake mixture over the crust, then dollop the remaining mixture on top and swirl gently with a knife.
  6. Bake for 40–45 minutes until edges are set but center jiggles slightly. Cool completely before slicing.
