Ingredients

  • 1 lb ground beef (80/20)
  • 1 cup fresh breadcrumbs
  • 1 large egg
  • ¼ cup chopped fresh parsley
  • 3 cloves garlic (minced)
  • ½ medium onion (finely chopped)
  • 1 can (14 oz) quality canned tomatoes
  • 2 tsp smoked paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, parsley, garlic, onion, salt, and pepper. Mix gently until just combined.
  2. Using wet hands, form the mixture into golf ball-sized meatballs.
  3. Heat olive oil in a skillet over medium-high heat. Sear meatballs in batches until browned on all sides (about 6-8 minutes).
  4. Remove meatballs and add canned tomatoes and smoked paprika to the skillet; season with salt and pepper.
  5. Return meatballs to the skillet, cover, and simmer on low heat for 25 minutes.
  6. Serve hot over rice or pasta, garnishing with additional parsley if desired.
