- 1 lb ground beef (80/20)
- 1 cup fresh breadcrumbs
- 1 large egg
- ¼ cup chopped fresh parsley
- 3 cloves garlic (minced)
- ½ medium onion (finely chopped)
- 1 can (14 oz) quality canned tomatoes
- 2 tsp smoked paprika
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground beef, breadcrumbs, egg, parsley, garlic, onion, salt, and pepper. Mix gently until just combined.
- Using wet hands, form the mixture into golf ball-sized meatballs.
- Heat olive oil in a skillet over medium-high heat. Sear meatballs in batches until browned on all sides (about 6-8 minutes).
- Remove meatballs and add canned tomatoes and smoked paprika to the skillet; season with salt and pepper.
- Return meatballs to the skillet, cover, and simmer on low heat for 25 minutes.
- Serve hot over rice or pasta, garnishing with additional parsley if desired.
