  • 3 cups Granny Smith apples, peeled and sliced
  • 1 cup granulated sugar
  • 2 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a bowl, toss apple slices with lemon juice and cinnamon; set aside.
  3. In a large mixing bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. Gradually add flour and baking powder; mix until just combined.
  5. Gently fold in the apple mixture until evenly distributed.
  6. Pour batter into the prepared dish and smooth the top. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
