Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup cold unsalted butter (cubed)
  • 1 tsp cinnamon (plus extra for garnish)
  • 3 cups tart apples (like Granny Smith), peeled and sliced
  • ¼ cup brown sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a rectangular baking pan or line it with parchment paper.
  2. In a large bowl, combine flour, granulated sugar, and cold butter until the mixture resembles wet sand.
  3. In another bowl, toss the apple slices with lemon juice, brown sugar, and cinnamon until well-coated.
  4. Press half of the shortbread mixture into the bottom of the prepared pan. Spread the apple filling evenly on top, then sprinkle the remaining shortbread mixture over it.
  5. Bake for 40-45 minutes until golden brown. Allow cooling completely before slicing into bars.
