  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 soft flour tortillas
  • 1/4 cup chopped green onions
  • 1 tsp cumin
  • 1 tsp chili powder
  • hot sauce to taste (optional)

Instructions

  1. Cook chicken in boiling water for 15-20 minutes until fully cooked. Shred with two forks.
  2. In a large bowl, mix shredded chicken, cream cheese, cheddar cheese, green onions, cumin, chili powder, and hot sauce until well combined.
  3. Preheat oven to 400°F (200°C).
  4. Place about 2 tablespoons of filling on one edge of each tortilla and roll tightly.
  5. Lightly spray or brush each taquito with olive oil and place seam-side down on a parchment-lined baking sheet.
  6. Bake for 20-25 minutes until golden brown and crispy.
