  • 3 ripe bananas (mashed)
  • 2 cups old-fashioned oats
  • 1/4 cup honey or maple syrup
  • 2 large eggs (room temperature)
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • Optional: 1/2 cup nuts or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add honey (or maple syrup), eggs, and vanilla extract; mix until well combined.
  4. In another bowl, combine oats, baking powder, cinnamon, and salt.
  5. Gradually fold the dry mixture into the wet mixture until just combined.
  6. If desired, fold in nuts or chocolate chips.
  7. Pour the mixture into the prepared baking dish and spread evenly.
  8. Bake for 25-30 minutes until golden brown on top; cool completely before slicing.
