  • 1 cup chopped walnuts
  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, mash ripe bananas; mix in grated zucchini.
  4. Stir in eggs and vanilla until combined.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Fold in walnuts and pour batter into the prepared pan.
  7. Bake for 60–70 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
