  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 large sweet potatoes (about 1 lb), peeled and cubed
  • 3 tbsp extra virgin olive oil
  • 1 cup BBQ sauce (your favorite)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the cubed sweet potatoes with 2 tablespoons of olive oil, garlic powder, paprika, salt, and pepper until well coated.
  3. Spread the seasoned sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes until golden brown and tender.
  4. While the sweet potatoes are roasting, season the chicken breasts with salt and pepper. Drizzle with the remaining tablespoon of olive oil.
  5. Heat a skillet over medium-high heat and sear each chicken breast for about 5 minutes per side until golden brown.
  6. Pour BBQ sauce over the chicken, cover the skillet, and cook for an additional 10-15 minutes until the internal temperature reaches 165°F (75°C).
  7. Serve the chicken alongside the roasted sweet potatoes in bowls.
